I Iove easy summer pies that don’t require me to heat the oven. This Frozen Rocky Road Pie is one of my favorites! Combining creamy half-and-half and rich chocolate pudding with a dreamy layer of whipped topping, this pie is a cold, comforting treat during the hot months. Packed with semisweet chocolate chips, chewy marshmallows, and crunchy pecans, every bite offers a delightful combination of textures and flavors. It comes together in a flash and our family enjoys it for any occasion.

I love making Homemade Rocky Road Candy during the holiday season. It disappears so quickly because our family enjoys the classic flavor combo. We love it so much that I wanted to create a summer dessert with the same flavors. I didn’t want anything fussy or complicated. During the hot summer months, I do my best to avoid the kitchen. Recipes have to be quick and easy. This Frozen Rocky Road Pie is stupidly simple, which is what I need!

Why We Love This Recipe

Frozen Rocky Road Pie is so easy to make. I piped on the whipped cream, but that’s optional! The pie comes together so quickly and you don’t have to be a good baker to make it. Only one bowl is required to whisk most of the ingredients together, so clean-up is a breeze.

I use the packaged 9-inch graham cracker crust. You can certainly make your own homemade graham cracker crust instead, but I think the beauty of this pie is the simplicity. You’re hot and don’t want to bake, but you need a dessert for a summer occasion. That’s when this Frozen Rocky Road Pie recipe shines the most!

How To Add The Optional Garnish For Looks

I added additional whip before serving, simply because that’s the look I wanted. You’ll need about a cup, in a 12″ pastry bag fitted with a 1M tip if you want the same look. The chocolate sauce is Torani brand. Honestly, the garnish is the hardest part of this recipe. Skip it if you’d like! Or avoid the whipped cream piping, and only opt for the chocolate sauce, nuts and marshmallow.

How To Store Leftovers

Let the pie thaw for about 10 minutes before serving. After serving the pie, immediately transfer the leftovers back into the freezer. I keep the pie in the original store-bought graham cracker crust container. Cover the pie with plastic wrap. Store the pie in the back of the freezer, where temperatures are more stable. Enjoy the pie for up to three months, in the freezer, and just let it thaw for a few minutes every time you want to enjoy a slice.

  • Optional Garnish: chocolate sauce, pecan halves and more mini marshmallows

Recipe Variations

There are a couple of ways you can change the ingredients of the pie to reduce sugar and calories, or flavor. First, walnuts are another nut option to try. Use chopped walnuts in place of the pecans. Chopped walnuts are also a great garnish if you’re using them as a substitute. Next, Sugar-Free Chocolate Pudding Mix can be used instead of the full sugar. Since you’re not baking, it won’t change anything about the recipe outcome.

How To Make Frozen Rocky Road Pie

In a large bowl, whisk cream and pudding mix for two minutes.

Stir in the chocolate chips, marshmallows, and pecans.

Transfer to the pie crust. Freeze until firm (about 6 hours). Remove from freezer 10 minutes before serving. Add optional garnish, if desired.

  • 1 container frozen whipped topping (8oz), thawed
  • 1/3 cup semisweet chocolate chips
  • 1/3 cup miniature marshmallows
  • 1/3 cup chopped pecans
  • 1 graham cracker crust (9in)
  • Garnish: chocolate sauce, pecan halves and more mini marshmallows

Instructions

    1. In a large bowl, whisk cream and pudding mix for two minutes. Fold in whipped topping.
    2. Stir in the chocolate chips, marshmallows, and pecans. Transfer to the pie crust. Freeze until firm (about 6 hours).
