There’s nothing more refreshing than the sweet and tangy flavor of lemon. I love enjoying lemon desserts in spring or summer when a lighter option is more appealing. This 4-Ingredient Frozen Lemon Delight is super easy to throw together and keep on hand. A rich layer of buttery Lemon Oreo crust is topped with lemon gelato and finished with whipped topping. While it’s a simple dessert, it’s always a crowd-pleaser. Keep it in the freezer and pull it out whenever there’s a need for something sweet.

When To Make Frozen Lemon Delight

This dessert is made in a 9×13-inch baking dish and serves 18 people. Since it’s fairly large, I enjoy making it for events with a crowd. Think of spring or summer parties and BBQs. Baby showers, bridal, graduation, and pool parties are perfect excuses for making this dessert.

Plus, it’s relatively cheap to make (depending on whether you use gelato or ice cream – see below). The best part is that you can make it ahead of any event and pull it from the freezer whenever you want.

Lemon Gelato vs. Lemon Ice Cream

I used lemon gelato for this recipe, but lemon ice cream works well, too. I think the gelato is tart and pairs well with the sugary crust and lightly sweetened whipped topping. However, it’s more cost-effective to use lemon ice cream. Either works, and I’d use what you have available at the local grocery store. It’s just a matter of preference. They’ll spread the same over the crust.

How To Store Leftovers

This Frozen Lemon Delight needs to be kept frozen. I pull it out to serve it and immediately place it back into the freezer. Do not keep it on the countertop. For the best freshness, enjoy the dessert within 3 months of making it. Place the dessert in the back of the freezer where temperatures are more stable. Add more sliced lemon, for garnish, as needed.

Recipe Variations

Feel free to change the Oreo crust to a special flavor if desired. Play with the flavors as desired and make the dessert your own. Golden Oreos would be a great substitution! The possibilities are endless! Just be sure to use the same amount of ingredients as listed below– a 14.3oz package of Oreos (no matter the flavor).

  • Lemon Oreo Cookies (14.3 oz)
  • Butter, unsalted or salted sweet cream
  • Lemon Gelato or Lemon Ice Cream (5 pints OR 2 1.5 quarts)
  • Frozen Whipped Topping (known as Cool Whip)
  • Optional Garnish: lemon wedges

How To Make Frozen Lemon Delight Dessert

Make a space in your freezer for a 9×13 baking pan. Using a food processor, finely crush the Oreo cookies, pulsing about 10 times or until completely crushed.

Add the melted butter and process for five seconds. Mix well with a spoon to combine the cookies and butter.

Pour into 9×13 baking pan and using the back of spoon, press the crust into the bottom of the pan. Pop the pan into the freezer for 10 mins.

Carefully spread about gelato onto the top of the crust. It helps to work in scoops, placing them on the crust and then pressing down, not really spreading out, but just placing scoops next to each other and then pressing them together to fill in all the spaces.

Top with whipped topping. Freeze for at least an hour before serving topped with lemon wedges if desired.

Ingredients

  • 1 Package, 14.3 oz, Lemon Oreo Cookies
  • 1 Stick, 1/2 cup, Butter, melted
  • 5 Pints Lemon Gelato
  • 12 ounces Whipped Topping, thawed
  • Fresh Lemon Wedges Cut Into Triangles, optional for serving

Instructions

    1. Make a space in your freezer for a 9x13 baking pan. Using a food processor, finely crush Oreo cookies, pulsing about 10 times or until completely crushed.

Notes

  • If using ice cream, instead of gelato, use two 1.5 quarts each of lemon ice cream.
  • Store the leftovers in the freezer for up to three months.
