If you’ve never made a sheet pan meal before, get ready to become obsessed. They’re so easy to make and everything can be prepped ahead of time. Essentially, you’re cooking the meat and side vegetables together on one sheet pan – I use a half sheet pan to make this recipe.
Clean up is always easy with sheet pan dinners because you can cover the pan with aluminum foil. Once the cooking process is complete, just pull the foil and toss it. Your sheet pan wont need any heavy scrubbing or cleaning. Just put it away! Doesn’t get it any easier than that.

Other than some cutting prep work, the only kitchen tools you’ll need are your sheet pan and the aluminum foil. Feel free to buy veggies that are already cut if you want to save yourself some time. That’s one of the reasons I love this recipe – it’s versatile.
How To Prep Your Veggies For The Best Roasting
The potatoes can be peeled or the skin left on. I like to leave the skin on – because I’m lazy. The potatoes need to be cut small enough to cook through in 20-30 minutes.
Otherwise, everything could burn and the potatoes still not be done. If larger pieces of potato are preferred, they should be baked at 400F for 10 minutes before everything else is added to the pan and then baked together.
Make sure the vegetables and meat are not be crowded on the pan, otherwise they may take longer to cook.
What Other Veggies Can I Use?
Red potatoes can be used instead of Yukon Gold. The recipe calls for 4 different color bell peppers, but any color of two whole peppers could be used instead. Other ingredients to try adding: peeled and chopped onion, chopped broccoli, fresh green beans, chopped zucchini or yellow squash.
Feel free to add some of your favorite herbs and spices. If you like some heat, add in red pepper flakes to kick it up a notch, or include some dried oregano, basil, thyme or parsley.

This is truly a meal unto itself, but I like to make it a bit more complete. Add some dinner rolls and a side salad, if desired. I also like to serve a little bit of dips. Homemade Spicy Mayo and sour cream are great additions that you can use for dipping.
How To Store Leftovers To Enjoy Later
The leftovers keep in the refrigerator for up to three days. Use an airtight container to ensure the meal stays fresh. Freezing is not recommended because the texture of the potatoes could become grainy or soggy.

- Kielbasa – This is a type of Polish sausage. Other smoked sausages like chicken sausage, turkey sausage or pork sausage, all could be used.
- Yukon Gold Potatoes – Make sure you wash and pat them dry first.
- Bell Peppers – The recipe calls for 4 different color bell peppers, but any color of two whole peppers could be used instead.
- Olive Oil – Olive oil works the best, but avocado oil can be used. Be generous with our usage.

Directions To Make Sheet Pan Sausage & Veggies
Preheat the oven to 400F. On a large sheet pan, toss the kielbasa rounds, ½-inch cubed potatoes, and the chopped bell peppers with the olive oil.
Spread the ingredients out in an even layer on the sheet pan with the kielbasa together in the center, the potatoes on one end, and the bell peppers on the other end of the sheet pan.
Sprinkle the potatoes and bell peppers with the paprika, salt, and pepper.
Bake at 400F for 20 minutes. Turn the kielbasa and continue baking until the potatoes are cooked through and the sausage is golden brown, about 5-10 more minutes.
Remove the pan from the oven and serve the kielbasa sheet pan dinner hot.
