Why are desserts just better when they’re bite-size and miniature? They’re automatically cute and I love that you can pop the whole dessert into your mouth! That’s just one of the reasons why I love these Chocolate-Covered Key Lime Pie Bites. They’ve got everything you love about the traditional pie, with a graham cracker crust and tart filling, but then they’re finished with a coating of chocolate. Fair warning – it’s hard to stop at just one.
I fell in love with Key Lime Pie when we took our first anniversary trip to Key West. If you’ve ever been, you know how much you can find Key Lime Pie all over the place. The most unique place to try the famous dessert is from Kermit’s Key West Key Lime Shoppe. They have a Chocolate-Covered Key Lime Pie on a stick that everyone loves and people will wait in line for it. That’s what my Key Lime Bites are inspired by – they taste just like the real thing!
These are such a great treat to make in the summer. The inside filling is both creamy and tart, then you still have a graham cracker crust. To finish, the whole thing is covered in milk chocolate. You can’t go wrong and everyone loves the flavor. They’re so hard to resist and sometimes I’ll even sneak one for breakfast.

How To Make Chocolate-Covered Key Lime Pie Bites
Overall, these Chocolate-Covered Key Lime Pie Bites aren’t very difficult to make. They don’t require much in the kitchen either, which is great. You’ll use a whisk, 9×13-inch baking dish and mixing bowl. On top of that, you’ll use parchment paper and wax paper. These are very typical kitchen items that you probably already own!

When To Make Chocolate-Covered Key Lime Pie Bites
These just scream summer dessert, but you can make them all year round. You can use key lime juice that you get from the fresh fruit or you can purchase key lime juice that’s from the bottle. I love to make it for BBQ’s, as a poolside snack and even take it to potlucks. You don’t want the chocolate to melt, so you can serve it over ice if you’re in a warmer spot – like outdoors.
How To Keep Leftover Bites Fresh
After your Key Lime Pie Bites have set on the wax paper, you want to keep them in an airtight food storage container. Immediately refrigerate the bites and keep them in the refrigerator until you’re ready to serve them. They’ll be fresh for 4-5 days to enjoy.
You can also freeze the Chocolate-Covered Key Lime Pie Bites for up to three months. Just let them thaw for a few minutes before enjoying again. They’re a great freezer-friendly dessert if you want to keep something on hand for unexpected guests.

- Sweetened Condensed Milk
- Egg Yolks
- Key Limes (For Juice & Zest)
- Melting Chocolate Wafers (I recommend Ghirardelli brand)
Step-By-Step Directions: Chocolate-Covered Key Lime Pie Bites Recipe
Preheat oven to 350 degrees and line a 9×13-inch baking dish with parchment paper. Using a medium bowl, whisk the graham cracker crumbs and melted butter until combined and sand like. Press the crust into the bottom of the baking dish and set aside.

Using a large bowl, whisk the sweetened condensed milk, egg yolks, key lime juice and key lime zest together until combined and smooth. Pour the batter into the crust.

Cover the baking dish with foil and place in the oven to bake for 25-30 minutes or until the center has set. Place into the freezer for 3 hours to allow to harden.

Remove from the baking dish and cut into 1 1⁄2 in squares. Using a large bowl, melt the chocolate melting wafers. One by one, dip the key lime pie bites into the chocolate using a fork underneath the bites for easy dipping and lifting out of the chocolate. Place the coated chocolate bites onto a wax paper cookie sheet Allow to harden before enjoying!

Ingredients
- 1 1⁄2 Cup Graham Cracker Crumbs
- 2⁄3 Cup Unsalted Sweet Cream Cutter, melted
- 2 Cans (14 oz each) Sweetened Condensed Milk
- 6 Large Egg Yolks
- 1 Cup Pure Key Lime Juice
- 3 Tablespoon Key Lime Zest
- 16 oz Ghirardelli Melting Chocolate Wafers
