Have you found a recipe so easy that you make it for practically every occasion? That’s how I feel about this pie. It’s creamy, sweet and tart. Plus, it only requires 4 ingredients! It’s a Frozen Lemon Pie and I’ve started to make this pie for every spring and summer event we’re invited to. They’d never know that it only took me minutes to make. Just throw it together and place it in the freezer until you’re ready to serve. You’ve got to try it to believe it.

Everything about this recipe is easy and you want to keep it that way. Sure you could make your own pie crust, but this recipe isn’t about being fancy. It’s delicious and foolproof. You start with a store-bought graham cracker pie crust. The filling combines instant lemon pudding mix with other ingredients to make it creamy and bring out the flavor.
It’s the perfect spring or summer recipe. I make it as an Easter dessert or for cookouts. It’s not a patriotic looking dessert, but it’s great for 4th of July as well. It’s nice that you can prepare the pie ahead of time and just take it out before serving. The whipped cream garnish is optional, but I like the way it looks.
How To Make This Frozen Lemon Pie Recipe
To start, unwrap a store-bought graham cracker pie crust and set aside. In a medium bowl, add 2 packets of Jello Lemon Instant Pudding Mix.
Add 3 cups of cold whole milk to the instant pudding.
Whisk until it forms a creamy pudding consistency. Add in the lemon zest and keep whisking.
Use a spatula to pour and smooth into the pie crust.
Place into the freezer for 15 minutes. In the meantime, you can make an optional whipped cream garnish. Beat together cold heavy whipping cream, granulated sugar and vanilla.
You can use a pastry bag and star tip to add whipped cream dots around the edges of the pie. Place pie back in freezer for at least 2 hours. When ready to serve, place a sharp knife under hot running water. Dry it off, then use to slice the pie.

- 1 Store-Bought 8-inch Graham Cracker Pie Crust

Notes
Cover with plastic wrap, after serving, and place back into the freezer. Pie is good for 4-5 days before tossing.
Another optional garnish is to add fresh blueberries or strawberries on the top.
