Chili recipes are one of my favorite things to enjoy. If you’ve ever been to a chili cook-off, you know that each recipe can be unique and different. It’s a one-bowl meal that’s comforting on a cold night and perfect for your game day tailgating. This Easy White Chicken Chili recipe is a favorite in our home and a regular on our dinner rotations. Load it up with toppings or serve it alone – you can’t go wrong.

What To Serve With White Chicken Chili
Honestly, you don’t necessarily need to serve the chili with anything. It’s a hearty meal that can be enjoyed on its own. However, if you’re looking to pair it with something, I recommend my mini cornbread muffins or a crusty French baguette.
I’m all about the toppings on my chili night. I like to have options with my chili. I let guests decide what they want to put on top of their chili. I offer avocado, sour cream, cheese (LOTS of cheese), hot sauce, and green onions. I’ve even seen people put Frito chips in their chili.
White Chicken Chili Ingredients:
- Vegetable Oil
- Onion
- Garlic: I don’t mind using minced garlic from a jar vs fresh
- Chicken Breasts
- Great Northern Beans: Use canned
- Diced Green Chilies: Use canned
- Chicken Broth
- Cumin: Adds depth of flavor and a smokiness
- Oregano
- Cayenne Pepper
- Salt and Pepper
- Optional Toppings: Shredded Cheese and Diced Jalapenos

How to Store Leftover Chicken Chili
Store leftover White Chicken Chili in an airtight container in the refrigerator once it has cooled to room temperature. It will stay fresh for about 3–4 days and can be easily reheated on the stovetop over medium heat or in the microwave until warmed through.
If the chili thickens in the fridge, simply stir in a splash of chicken broth while reheating to bring it back to the desired consistency. For longer storage, White Chicken Chili can also be frozen in freezer-safe containers for up to 3 months; thaw overnight in the refrigerator, then reheat.
How To Make Easy White Chicken Chili
In a large stockpot, add oil, garlic, onion, and chicken breast.

Heat on medium high heat until onions are tender and chicken is no longer pink.

Season with salt and pepper. Stir in beans.

Add chilies and chicken broth.

Add spices and mix well.

Heat over medium-high heat until boiling. Cover and reduce the heat to a simmer. Simmer for 30 minutes. Serve topped with shredded cheese and diced peppers if desired.

Easy White Chicken Chili
This hearty White Chicken Chili is packed with tender chicken, creamy great northern beans, and flavorful green chilies for the perfect balance of comfort and mild heat. It’s a warm, satisfying bowl of chili that’s rich, cozy, and perfect for an easy weeknight meal.
Ingredients
- 2 tablespoons vegetable oil
- 1/2 cup diced onion
- 1 tablespoon minced garlic
- 1lb fresh chicken breasts, cut into 1" cubes
- 3 cans, 15.5 oz, great northern beans
- 1 can, 4 oz, diced green chilies
- 4 cups chicken broth
- 2 teaspoons cumin
- 2 teaspoons oregano
- 1/2 teaspoon cayenne pepper
- salt and pepper
- Optional Toppings: shredded cheese & diced jalapeno peppers
Instructions
- In a large stockpot, add oil, garlic, onion and chicken breast. Heat on medium-high heat until onions are tender and chicken is no longer pink.
- Season with salt and pepper.
- Stir in beans, chilies, and chicken broth.
- Add spices and mix well. Heat over medium-high heat until boiling.
- Cover and reduce the heat to a simmer. Simmer for 30 minutes. Serve topped with shredded cheese and diced peppers if desired.
Notes
- If you want something thicker, drain the beans OR reduce your broth to 2 cups and do not drain your beans. It's really personal preference.
- Let the White Chicken Chili cool completely, then store it in an airtight container in the refrigerator for up to 3–4 days. Reheat on the stovetop or in the microwave, adding a splash of chicken broth if it thickens.
