Our summer schedules might change each week, but the one thing that brings us together is a family meal. I love easy dinner solutions that the whole family can enjoy and the one that always tops our list is Taco Night! To jazz it up, I’ve got a new take on your Taco Tuesday that’ll make you want it every night of the week. I easily create a BBQ Chicken Fusion Tacos recipe, alongside Classic Chicken Tacos, for a Two Way Family Taco Night.
I always appreciate easy meals that the kids enjoy too. My oldest has been enjoying tacos since he was two and now we’re introducing my youngest to them. While they love traditional seasoning, I opt for the BBQ Chicken Fusion Tacos. Either way, I can grab all of my ingredients at Walmart.
Walmart has become my one-stop shop for taco night because they carry all of the Old El Paso products that we love. My new favorite find is the Old El Paso Stand ‘N Stuff Shells– they’re BRILLIANT. I love that they stand up on their own as you stuff them, so even the kids can fill their own tacos.
Next time you’re standing in the international aisle and you’re contemplating dinner, grab your favorite Old El Paso products and get creative. You never know what taco filling combination will be your family’s new dinner request.
Two Way Family Taco Night: BBQ Chicken & Classic Chicken Tacos
Start with two pounds of lean ground chicken. In a pan over medium-high heat, cook until chicken is no longer pink and resembles coarse crumbs. Divide the meat equally. Add your favorite Old El Paso taco seasoning to one half and toss the other half in BBQ sauce. Set aside.
In a food processor, blend together: ½ cup of sour cream, 1 cup of mayonnaise and 1 can of Chipotle Peppers in Adobo Sauce to create a dressing.
In a medium bowl, add your chipotle dressing to 1 bag of raw cabbage coleslaw mix. Toss until coated evenly.
To create your BBQ Chicken Fusion Tacos:
- Fill your Old El Paso Stand ‘N Stuff Shells ¼ high with ground BBQ chicken
- Top with cheese of your choice (I used a colby mix)
- Add the chipotle coleslaw mix to the top
- Optional: top of jalapeno slices or avocado
To create your Classic Chicken Tacos:
- Fill your Old El Paso Stand ‘N Stuff Shells ¼ high with traditional taco seasoned ground chicken
- Top with cheese of your choice
- To finish your taco, use any traditional taco topping you love! We use cilantro, shredded lettuce, tomatoes and sour cream.
Side by side, you’ll have two creative taco ideas that can take your taste buds from southwest flavors to the wild west. No matter how you crunch it, tacos are an easy summer meal solution – one we love any day of the week.
