Put a twist on nachos and try these Easy Irish Nachos. You don’t have to be Irish to appreciate them! They’re full of flavor, with thinly sliced seasoned Russet potatoes. Then, they’re topped with a blend of white and mild cheddar cheese and crispy bacon, before baking until bubbly. Add a dollop of sour cream for extra creaminess. They’re perfect for an easy weeknight dinner or appetizer.

What Are Irish Nachos?
Regular nachos are made with chips, but these Easy Irish Nachos opt for thinly-sliced russet potatoes instead. The potatoes serve as a hearty and substantial base, that’s perfect for toppings. I buy them in bulk to make these Irish Nachos or my Russet Potato Salad recipe.
They’re roasted with oil and seasoning before baking til crispy. They go back into the oven for the toppings to melt. The end result is a savory dish. They can be served as an appetizer or main course.
Irish Nachos For St. Patrick’s Day
If you’re throwing a St. Patrick’s Day party, these nachos are a fun appetizer. You can prep the potatoes and bacon ahead of time. Add the toppings to melt, right before serving. Sere the nachos fresh out of the oven and hot. Pair the nachos with a few bottles of Guinness beer for your guests and you’re ready to go. If you want an Irish-inspired dessert, these Guinness Chocolate Cookies are perfect, too.

How To Store Leftovers
Once the nachos have cooled, transfer the leftovers to an airtight food storage container. Store the leftovers in the refrigerator. Reheat in 1 minute increments, on high, in the microwave until cheese is melted again. Feel free to add more toppings as desired. For the best freshness, enjoy the Irish Nachos within 3-4 days.
Easy Irish Nacho Ingredients:
- Bacon: regular thickness and hickory-smoked is what I used
- Russet Potatoes: these potatoes will give you that nice crispy texture you want for toppings
- Olive Oil: this will help the potatoes crisp
- Seasonings: paprika, onion powder, garlic power, kosher salt, black pepper
- White Cheddar Cheese: shredding your own is always superior
- Mild Cheddar Cheese: shred some more cheese
- Optional Garnish: sour cream or green onion
Honestly, measure that cheese with your heart. Some people like super cheesy nachos. Other people don’t care for tons of cheese. It’s just a taste preference.
How To Make Irish Nachos
Preheat your oven to 400ºF. Wash and dry the potatoes. Slice them into ¼ in slices. Pro Tip: use a mandoline slicer to keep your potatoes even and slice them quickly. Place into a large bowl. Add Olive oil, salt, pepper, paprika, onion and garlic powder.

Lay out flat on a second parchment paper lined baking sheet. Bake for 20 mins.

Twist the bacon and place on parchment or foil lined baking sheet. Bake for about 15 min or until it’s reached your desired crispiness.

Remove both from oven and turn the heat up to 475ºF. Pat bacon dry and chop. Place potatoes in a single layer in a 8×8-inch baking dish. Layer potatoes, shredded cheese and bacon.

Repeat until are stacked. Return to oven and leave for 3-5 mins until all cheese is melted and bubbly. Serve with green onion, chives and or sour cream.

- 1 tbsp onion power
- 1 tbsp garlic powder
- 1 ½ tsp kosher salt
- 1 tsp black pepper
- 1 cup white cheddar cheese, shredded
- 1 cup mild cheddar cheese, shredded
- Sour Cream to serve
