It has a nice dense texture, the cranberries add a slightly tart flavor, the streusel topping adds crunch and it’s finished with the sweet glaze. You can’t go wrong with making this one!

It’s a pantry staple that I use all of the time. Once you make the three layers, you just throw your casserole into the oven.

Coffee cakes are such a sweet and delicious breakfast option that stand on their own. I always serve it alongside a coffee bar, with plenty of fun coffee toppings and creamers. If it’s part of a bigger brunch, then you’d want to add sides as well. Breakfast meats and eggs would round it out as a complete meal.

What To Do With Leftover Cranberry Coffee Cake

This breakfast casserole recipe serve 9. If you have any leftovers, you can keep the coffee cake in the original casserole dish and just cover it with plastic wrap. I put it in the refrigerator and it lasts 4-7 days. I just reheat it in the microwave. You can add more glaze again, if you prefer.

  • Chopped Walnuts
  • Brown Sugar
  • Ground Cinnamon

Glaze:

  • Confectioner’s Sugar
  • Milk
  • Vanilla

Step-By-Step Directions To Make Cranberry Coffee Cake

Preheat the oven to 400 degrees. In a large bowl, combine the biscuit mix, sugar, milk and egg.

Pour into a greased 8-inch square baking dish. Drop cranberry sauce by the teaspoon over the batter.

Combine topping ingredients and sprinkle over the cranberry sauce.

  • 1/2 Cup Chopped Walnuts
  • 1/2 Cup Brown Sugar, Packed
  • 1/2 Teaspoon Ground Cinnamon
  • Glaze:
  • 1 Cup Confectioner's Sugar
  • 2 Tablespoons Milk
  • 1/4 Teaspoon Vanilla
