The most refreshing side dish recipe is this classic Watermelon Mint Fruit Salad. It’s loaded with chunks of fresh watermelon that’s mixed with raspberries, pitted cherries and strawberries before it’s tossed into a fresh mint-lime salad dressing. It’s just bursting with flavor and perfect for entertaining in the warmer months.

There’s nothing more refreshing to me than a great fruit salad – I crave it when the weather is hot. The natural sugar tastes great and the citrus from the dressing adds a bit of zest. Aromatic herb flavor from the fresh mint is the finishing touch. It’s a truly unique fruit salad!

Everyone always asks me to make it for our gatherings. I bring it to potlucks, BBQ’s and serve it at pool parties. If you prep the salad a little ahead of time, the dressing marinates the fruit even more. It might be my favorite summer side dish of all time. How To Make This Watermelon Mint Fruit Salad Recipe

This is such an easy recipe that doesn’t require much, in terms of kitchen tools. However, there’s a lot of prep work since you’re cutting the fruit. Save time and purchase pre-cut fruit if you’d like. You’ll need multiple mixing bowls, a large one and a smaller one. I use a whisk to make the salad dressing. That’s it!

How To Prep This Salad Ahead Of Time

This Watermelon Mint Fruit Salad can be prepped a few hours ahead of time and kept refrigerated until ready to serve. I don’t recommend making the salad the day or night before an event. The fruit releases juices and loses its firmness. But made a few hours ahead of time, with the citrus dressing, is a great way to blend all of the flavors together.

Save Time Or Mix It Up

When I’m shopping for this salad, I buy whole fruits and cut them myself. If you want to save some time, buy fruits that are already chopped by the grocery store. Another great way to shop is seeing what’s on sale. You can omit a fruit if it’s too costly or you don’t like the flavor. I’ve also added blueberries to this salad and it tastes great! Don’t be afraid to mix it up.

How To Keep Watermelon Mint Fruit Salad Fresh

Transfer any leftover salad to an airtight food storage container. For best freshness, enjoy the salad within 3-4 days of making it. If there seems to be excess fruit juice, just drain it before enjoying again.

Can You Freeze Fruit Salad?

Unfortunately, this salad doesn’t freeze well. I recommend making a new batch every time.

  • Honey (or Agave Syrup)

Directions To Make Watermelon Mint Fruit Salad

 Place diced watermelon, halved strawberries, raspberries, and halved cherries in a large bowl.

In a small bowl, whisk together the lime zest, lime juice, honey, and chopped mint.

Drizzle dressing over top of the fruit bowl and lightly toss together. Garnish with mint and enjoy.

This fresh watermelon salad has a lime-mint dressing with raspberries, strawberries and pitted fresh cherries to elevate the flavors.

Ingredients

  • 4 Cups Watermelon, diced into 1 inch cubes
  • 1 ½ Cups Strawberries, halved
  • 1 ½ Cups Raspberries
  • 1 ½ Cups Pitted Cherries, halved

For The Dressing

  • 1 ½ tsp Fresh Lime Zest
  • 2 tbsp Lime Juice
  • 2 tbsp Honey
  • 1 tbsp Fresh Chopped Mint, plus extra for garnish

Instructions

    1. Place diced watermelon, halved strawberries, raspberries, and halved cherries in a large bowl.
    2. In a small bowl, whisk together the lime zest, lime juice, honey, and chopped mint.
    3. Drizzle dressing over top of the fruit bowl and lightly toss together.
    4. Garnish with mint and enjoy.

Notes

    • Agave syrup can be used in place of honey.
    • For best freshness, enjoy the salad within 3-4 days of making it. Store the salad in the refrigerator in an airtight food storage container.
