There are some internet recipes that people go crazy for and they spread like wildfire. They gain popularity and become famous as people try it for themselves. Boat Dip is a cold, fiesta taco-like dip that’s perfect for well… a day on the boat! Serve it as a snack or an appetizer and you can’t go wrong. The dip is easy to make. Getting a boat could be more challenging.

Why Is It Called Boat Dip?
A boat isn’t required to make this dip. I enjoy it all year round, but it’s one of those snacks that pairs well with good weather. Basically, it’s a cold Mexican dip. I call it “taco pimento cheese without pimento” because the texture is similar. It can be a sunny beach day, pool day or time on the lake. Just add your favorite chips, pretzels or vegetables for dipping.

- Frito scoops
- Tostitos scoops
How To Store Leftovers
For best freshness, store leftovers in the refrigerator immediately after serving. Store the dip in an airtight food storage container. Refrigerate the dip for up to 3 days. Do not freeze this dip. The consistency will change during the thawing process.
Boat Dip Ingredients:
- Taco Seasoning: Store-bought taco seasoning (1 packet) or homemade taco seasoning works.
- Sour Cream: Use full fat sour cream for the best flavor and texture. It provides the base of this creamy dip.
- Rotel Canned Tomatoes: Buy the the diced tomato and green chili variety. Make sure to drain it well.
- Cheddar Cheese: I always shred my own. The consistency is better. Pre-shredded works in a pinch.
- Cilantro: Freshly chopped cilantro adds a little extra flavor. Wash the cilantro well.

Tips For Making The Dip
I love to add a little sprig of cilantro on top for garnish. It’s not a fancy or fussy dip. Enjoy it straight out of a storage container, especially if you’re on a boat! If you want to add a twist to it, use a drained can of corn for a mix-in. As it sits in the refrigerator, it only tastes better because the spices blend. I keep it refrigerated for several hours prior to serving.
