Here’s the secret to making this recipe the easy way – start it out in the microwave. You don’t have to bake both ends of this recipe in the oven. It saves you so much more time to cook your potato in the microwave and finish them in the oven.
I serve these as a heavy appetizer. They can be eaten as a finger food because the outside acts as a boat to hold everything in. They a classic menu item at any sports bar. Easy Twice Baked Potato Skins Recipe
I bake my potatoes in the microwave. To start, I wash & scrub the skin. Poke holes in the potato with a fork. Place on a microwave safe plate and microwave for 5 minutes. Flip over and microwave for an additional 4-5 minutes. Remove from oven and let cool until you can handle – cut in half.
Preheat oven to 400º. Scoop potato filling out of the shells, leaving a little potato in the skin so it holds it shape.
Place potato filling into a mixing bowl and place shells onto a baking sheet, cut side up. Add bacon, all but 2 tablespoons of the shredded cheese, sour cream, and spices.
Mix well to combine.
Spoon potato batter into each potato shell and bake for 15 minutes.
Sprinkle remaining cheese on top and return potatoes to the oven for 2-3 minutes or until cheese is melted. Serve topped with sliced green onions.

- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- Sliced green onions, optional for serving
Instructions
- Preheat oven to 400.
