I get bored when my dinner don’t have enough flavor. I’m always on the hunt for an easy weeknight meal solution that the whole family loves, while beating boredom. SouthWest flavors are always a hit in our home – it’s a little tex-mex inspiration for the table. This SouthWest Baked Chicken dish can be prepared ahead of time and then thrown into the oven. From start to finish, it’s an easy recipe that’ll become a new favorite in your home.

What To Serve With SouthWest Baked Chicken
Keep this dinner idea simple and hassle-free. I like to pair the chicken with a vegetable or salad to keep it light. I love to mix salsa and ranch dressing together to toss with the salad – to keep the SouthWest flavors. If you don’t mind a heavier pairing, you can serve the chicken with fresh flour tortillas or corn cake. Both of those pairings give you slightly sweeter carb.
How To Make SouthWest Baked Chicken
Mix the garlic powder, cumin, salt and pepper and set aside. Place the chicken in a sealable bag, sprinkle the chicken with the seasoning mixture.
In a small bowl combine the corn, black beans, green chiles, red bell pepper, and chopped cilantro and mix well. Set to the side.
Line a baking pan with parchment paper. Place the chicken on the pan and bake for 10 minutes.
Remove the chicken and then place it In a large casserole dish, lay the chicken breast flat in the baking dish.
Spread the corn mixture evenly over it.
Add cheese on top of the mixture.
Bake uncovered at 375˚F for 30-40 minutes. Enjoy! For leftovers, just store in an air-tight container, in the refrigerator. It will last up to five days. You can always add more cheese on top when you re-heat in the oven or microwave.

This easy baked chicken dish is full of SouthWest flavor and comes together quickly!
Ingredients
- 4-5 boneless, skinless chicken breast
- 1 cup canned black beans, rinsed and drained
- 1 cup corn, rinsed and drained
- 1 can diced green chiles
- 1 red bell pepper, diced
- 1/4 cup chopped cilantro
- 1 cup Colby jack cheese, shredded
- 1/2 tsp minced garlic
- 1/4 tsp cumin
- 1/4 tsp crushed red pepper
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
