I love a dinner that is savory and doesn’t feel like I’m sacrificing any flavor. My dinner rules are simple: it must be made in 30 minutes, it has to be full of flavor and it must be versatile for leftovers. This Salsa Verde Pork Chops recipe fits all of my requirements for an awesome dinner.
Salsa verde has less heat than red tomato salsa and it a slight sweet flavor. It’s always been my favorite type of salsa and it’s the star of this recipe. It helps to keep the pork chops tender and adds the flavor we want without packing extra calories.
This is also a low-carb and keto-friendly recipe. If you have any leftovers, make yourself a Mexican salad by chopping the pork and putting over a bed of lettuce with olives, cheese and guacamole. Yum! I’m sure after you’ve tasted these pork chops, it will be on your dinner recipe rotation.
Salsa Verde Pork Chops
Preheat the oven to 350 degrees and spray an 11×7 baking dish with non-stick cooking spray. Heat the olive oil and minced garlic in a large pan. Brown the pork chops on both sides and season with salt, pepper and cumin.
Remove the pork chops from the pan and place in the baking dish.
Pour the salsa verde over the pork chops and top with diced jalapeno. Bake 25-30 minutes.
Remove from the oven and serve with diced avocado, salad or riced cauliflower.
