Everyone loves the treats available at Disney parks. If you’re like me, it’s one of the best reasons to take a Disney vacation. When you get home from a trip and you’re feeling a bit sad, I like to create something that reminds me of the happy memories our family created on vacation. These copycat Red Velvet Mickey Waffles are similar to the ones you can find at Mickey’s Very Merry Christmas Party.
The recipe does require a special Mickey waffle iron, but I guarantee it’s a fun small appliance that’s a must in any Disney fan’s kitchen. Our oldest son loves making Mickey waffles and this recipe is perfect for the holiday season. He even loves to help out in the kitchen when we’re making the batter. I always think spending time in the kitchen is a great way to bond with your kids too.

Red Velvet Mickey Waffles Recipe
The secret to making this easy-peasy is using red velvet cake mix. Most people don’t even realize how versatile cake mix can be. Any brand is fine.
Whisk all of your ingredients together in a large mixing bowl. Make sure you eliminate any clumps in your mix and eggs are beaten before being added.
Spray your iron with non-stick cooking spray after it’s fully heated. Add 1/4 cup of the red velvet waffle mix to each individual Mickey waffle form. If your waffle iron comes with a measuring cup, use that one.
Let the waffles cool on a rack.
Serve with powdered sugar, syrup and whipped cream. To create a cream cheese frosting: blend together 4 tbs of cream cheese with 2 cups of powdered sugar.

Ingredients
- 1 Box of Red Velvet Cake Mix
- 4 Eggs, Beaten
- 2 Cups of Milk
- Nonstick Cooking Spray
Instructions
- Whisk together all ingredients.
- Heat waffle iron.
- Spray waffle iron with cooking spray.
- Pour 1/4 cup of waffle mix into the waffle iron.
- Cook until slightly crisp and firm on both sides of waffle. Serve with syrup, whipped cream and powdered sugar.
