Hearty Egg & Hash Brown Overnight Brunch Casserole Recipe
There’s a secret ingredient to this Overnight Brunch Casserole recipe – it’s baking mix. Not sure what baking mix is? It’s just good old-fashioned boxed Bisquick Mix. You whisk it together, with eggs and milk. The overnight process helps it to settle and blend all of the flavors together.
When To Make Your Overnight Brunch Casserole
For our family, this is a year round breakfast idea. However, it originally started as a holiday brunch idea for us. I needed something that was easy to make in the mornings without waking up at the crack of dawn. When guests spend the night, I want them to relax and I can’t make much noise in the kitchen. That’s how this recipe was born! It’s also great for Mother’s Day and Easter brunch as well.
What To Serve With Overnight Brunch Casserole Recipe
There’s already sausage and bacon in this casserole, so I never feel like you need more breakfast meat. Everything you need is in one casserole. You could add some fresh biscuits with marmalade or pastries for something sweet. I love a fresh pot of coffee and orange juice with this recipe. Mimosas are always a great idea for special holiday occasions too.
Prepping This Casserole The Night Before
You basically throw everything into a bowl. You’ll be browning off the sausage over the stove top. To keep things super easy, you can buy your vegetable pre-chopped from the produce department at your grocery store. I just get microwaveable bacon (by Hormel) to make things even easier.
What You’ll Need From The Grocery Store:
- Frozen Shredded Hash Brown Potatoes
- Bulk Pork Sausage
- Bacon
- Green Pepper
- Shredded Cheddar Cheese
- Green Onion
- Baking Mix (Bisquick)
- Salt
- Eggs
- Milk
How To Make This Overnight Brunch Casserole Recipe
In a large bowl, combine hash browns, sausage, bacon, green pepper, 1 cup of cheese and onion.
Transfer to a greased 9×13 inch baking dish.
In another bowl, whisk baking mix, salt, eggs and milk together. Pour over the top.
Sprinkle with remaining cheese. Cover and refrigerate overnight.
Remove from the refrigerator for 30 minutes before baking. Bake, uncovered, at 375 degrees for 30-35 minutes until golden brown. Let stand for 10 minutes before cutting.

- 1 Green Onion, Chopped
- 1 Cup Baking Mix (Bisquick)
- 1/2 Teaspoon Salt
- 4 Eggs
- 3 Cups Milk
Instructions
