What Makes Carrot Spirals Such A Great Dish

I too was skeptical at first of the combined flavors of parmesan and garlic topped on carrots…but after that first bite, it’s a combo that has been missing from my life for way too long. If you love garlic (who doesn’t?!) and you crave that delicious salty flavor of parmesan cheese, then this recipe is most definitely right up your alley.

Did I mention it’s healthy as well? Could you ask for anything more in a recipe? Great flavors and healthy with a light and refreshing taste? Yes, please. With summer quickly approaching, being able to grow your own carrots from your garden to add to this recipe would take it completely over the top.

Not only is this the perfect dish for any outdoor potluck or summer gathering, but it’s just as delicious to make at home as a show-stopping side dish for any family meal. Trust me when I say that this recipe will “wow” you from the very first bite.

How To Make This Carrot Spirals Side Dish Recipe

Preheat the oven to 400 degrees. Spiralize the carrots. Toss the carrots spirals into a medium size bowl and add in the minced garlic, onion powder and 1/4 C. Parmesan cheese. Add salt & pepper.

Bake for 15-20 minutes or until the carrots are tender and crisp.

Remove from the oven and garnish with Parmesan. I like to serve my spiral carrots with roasted chicken for a healthy dinner. Store any leftovers in an air-tight container and microwave to reheat!

Low Carb Parmesan & Garlic Carrot Spirals Side Dish

As a low carb pasta alternative, this carrot spirals side dish recipe is delicious and healthy!

Total Time 30 minutes

Ingredients

  • 4 medium sized carrots
  • 2-3 cloves minced garlic
  • 1/2 tsp. onion powder
  • 1/4 Shredded Parmesan cheese + more for garnish
  • salt & pepper to taste

Instructions

  1. Preheat the oven to 400 degrees. 
  2. Spiralize the carrots. 
  3. Toss the carrots spirals into a medium size bowl and add in the minced garlic, onion powder and 1/4 C. Parmesan cheese. Add salt & pepper. 
  4. Bake for 15-20 minutes or until the carrots are tender and crisp. 
  5. Remove from the oven and garnish with Parmesan.
