It has a tomato broth base, Italian sausage, ground beef, fresh basil, seasoning, and broken lasagna noodles that cook to al dente. Tips For Making This Lasagna Soup Recipe

Like any great soup recipe, it all starts with a large stockpot to make it in! This is a one-pot recipe that you make over the stovetop. The noodles cook directly in the soup so clean up is easy. Chop the onion, garlic and basil by hand or use a food processor to make it easier.

What To Serve With Lasagna Soup

Even though this is truly a one-bowl meal, a great side of bread or salad is a great add-on. A Homemade Italian Bread elevates the soup, if you have time to make your own. Recipe Variations

There are a few different variations I’ve seen of this recipe. Some people use veal, while other use just Italian sausage or ground beef. I like the combination of ground beef and sausage together. Use whatever is on sale! Another variation is the type of pasta you use. Broken lasagna noodles are great for the lasagna theme, but bowtie or rotini work well too.

How To Make Lasagna Soup In The Slow Cooker

If you want to make this soup in the slow cooker, brown off your meat over the stove top first, along with the onions and garlic. Add it to the slow cooker and dump the rest of the ingredients – besides the noodles. Cook it on low for 4-6 hours until hot. Drop in the lasagna noodles and cook for another 20 minutes until they’re al dente. Serve with the cheese topping and fresh basil.

How To Store Leftovers

Transfer any leftovers to an airtight food storage container. Keep the leftovers refrigerated. For the best freshness, enjoy the leftovers within 4-5 days of cooking. Reheat individual portions in the microwave, on high, for 1-2 minutes. Stir and reheat more, if needed. Add more toppings once reheated.

Can You Freeze Lasanga Soup?

Yes! Lasanga Soup freezes so well. It’s one of my favorite recipes to double and freeze half for later. I’ve even given half as a gift for families who are expecting a baby. Use a freezer-safe container and place it in the back of your freezer where temperatures are more stable. Freeze for up to six months. Let it thaw in the refrigerator overnight or in a slow cooker until heated. Discard after six months.

  • Parmesan Cheese

How To Make Lasagna Soup

In a large stockpot, add the olive oil, onion, and garlic. Let it cook until softened, for about 4-5 minutes until fragrant.

Add the meat, and cook until browned and crumbled. Next, add the tomato sauce, tomato paste, chicken broth, and all of the seasonings (parsley, oregano, basil, Italian seasoning, and red pepper).

Bring the soup to a boil. Add the heavy whipping cream and drop in the lasagna noodles. Let the noodles cook until al dente.

In a small mixing bowl, combine the topping ingredients. Add it on top of soup when serving, along with fresh basil.

  • 2 Tablespoons Olive Oil
  • 1 Yellow Onion, Finely Chopped
  • 6 Cloves Garlic, Minced
  • 1/2 Lb Lean Ground Beef
  • 1/2 Lb Sweet Italian Sausage
  • 2 Tablespoons Tomato Paste
  • 28 oz Tomato Sauce
  • 7 Cups Chicken Broth
  • 2 Teaspoons Dried Parsley
  • 2 Teaspoons Oregano
  • 2 Teaspoons Fresh Basil, Chopped
  • 1 Teaspoon Italian Seasoning
  • 1/4 Teaspoon Red Pepper Flake
  • 1/4 Cup Heavy Whipping Cream
  • 1 Box Lasagna Noodles, Broken Into Small Pieces

For The Topping:

  • 1 Cup Ricotta
  • 1 Cup Mozzarella
  • 1/2 Cup Parmesan
