However, you can prepare the batter ahead of time and then serve fresh.

My kids are the ones who started to ask for Christmas-themed breakfast recipes. They’re obsessed with the holiday and we use every chance we can to celebrate it – even at breakfast time. I used my Grandmother’s pancake recipe but added all of the traditional gingerbread spices to it. 

The result is a light and fluffy pancakes that your family will love. Stay in your pajamas a bit longer, turn on a Christmas movie, and just relax. How To Make Homemade Gingerbread Pancakes

Our whole family loves this recipe. You can make the ginger flavor a bit more strong, if you prefer, but it’s mild enough that kids love eating them too. As soon as Thanksgiving is over, our family starts to enjoy these pancakes. If we have a Christmas outing, like picking out our Christmas tree, I make a festive breakfast to kick off the day.

You can prep the pancake mix the night beforehand and you don’t need anything special to make them. I use our Cast Iron Stovetop Griddle and use the stovetop burners.

What To Serve With Gingerbread Pancakes

I like to serve them fresh off the griddle and individually plate them. We’ll put a bunch off toppings in the center for people to add. I decorated the top of these pancakes with candy decorations. On the side, I’ll make sausage links, bacon and eggs too. Here are some awesome topping ideas:

How To Prepare Gingerbread Pancakes Ahead Of Time

Pancakes are best when they’re hot. Sure you can reheat pancakes, but that isn’t the same. Mix the wet and dry ingredients together to create a batter. Keep the batter in the refrigerator overnight. Stir again in the morning and let it sit for a few minutes while the griddle warms. Then make your pancakes fresh and hot!

  • All-Purpose Flour
  • Sugar
  • Baking Powder
  • Ground Cinnamon
  • Ground Ginger
  • Ground Allspice
  • Egg
  • Milk
  • Molasses
  • Canola Oil
  • Non-Stick Cooking Spray

Step-By-Step Instructions To Make Your Pancakes

In a large bowl, combine the first six ingredients.

Dry Mix Gingerbread Pancakes

In a smaller bowl, combine the egg, milk, molasses and oil.

Molasses and wet ingredients

Stir the wet ingredients into the dry ingredients until moistened.

Pour batter by 1/4 cup onto a hot griddle. Flip when bubbles start to form on the top. Cook until golden brown. Serve hot with toppings.

Ingredients

  • 1 Cup All-Purpose Flour
  • 2 Tablespoons Sugar
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Ground Cinnamon
  • 1/4 Teaspoon Ground Ginger
  • 1/4 Teaspoon Ground Allspice
  • 1 Egg
  • 3/4 Cup Milk
  • 2 Tablespoons Molasses
  • 1 Tablespoon Canola Oil
  • Non-Stick Cooking Spray
  • Optional Toppings: Dried Cranberries, Syrup, Whipped Cream, Apple Pie Filling

Instructions
