Easy Blender Muffins Recipe

I just created Easy Protein Blender Muffins to satisfy my sweet tooth, pack protein and satiate my hunger. The recipe features Quest Nutrition’s latest flavor: Cinnamon Crunch. Call me nostalgic, but I still like to have the taste of something sweet in the morning. I think it’s from all the years growing up on kid’s cereals. That little something sweet just helps to wake me up! But I can’t have sugar laden breakfast foods anymore.

The flavor reminds me of the way my milk would taste after eating a bowl of cinnamon crunch cereal, as a kid. Protein keeps me feeling full until lunch and it’s the nutrient I need for building muscle. Quest Nutrition’s protein powder has 20g of protein (per scoop) and none of the sugar that I used to eat as a kid. Plus, it only has 1g net carbs, so it doesn’t add unnecessary carbs to my Easy Protein Blender Muffins.

Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes

Ingredients

  • 5 Bananas
  • 2 Eggs
  • 1/2 Cup Unsweetened Natural Applesauce
  • 1 Tsp Honey
  • 1 Tsp Baking Soda
  • 1 Tsp Baking Powder
  • 1/2 Tsp Cinnamon
  • 1/4 Tsp Salt
  • 1 Packet of Quest Nutrition Cinnamon Crunch Protein Powder

Instructions

  1. Pre-heat oven to 350º
  2. Open bananas and slice in half.
  3. Pour all ingredients into your blender.
  4. Blend on High for 2-3 minutes until ingredients are well mixed.
  5. Pour into a lined mini-muffin tray.
  6. Bake for 18-20 minutes until tops are golden brown. Allow time to cool.
