I love a juicy pork loin for dinner. It’s a great alternative when our family is getting bored with chicken, but we don’t want red meat. This easy Cuban Mojo Pork is a fantastic weeknight dinner idea that can be cooked two different ways – baked or grilled. It’s marinated with freshly squeezed juices and fruit zest. Just serve over a cilantro rice and enjoy!

How To Make This Recipe Ahead Of Time
Marinated recipes just seem to make life easier because you can work ahead of time. You can marinate all day long and then cook the meat when you’re ready. The longer you marinate, the better the flavor turns out to be. So you really can’t go wrong.
If it’s summertime, you might want to opt for grilling this recipe vs baking. The instructions below are for baking, but you can toss the pork onto the grill and get those fabulous grill marks. Just be sure to check the internal temperature of the meat with a meat thermometer – it needs to be 145º before serving.
Easy Marinated Cuban Mojo Pork Recipe
Using a large bowl, combine all ingredients and mix until combined.
Place the pork loin into a deep dish.
Pour the sauce over the pork and cover with foil.
Place into the fridge to allow the pork to marinate overnight or at least 8 hours.
The next day, Preheat oven to 425 degrees and place a wire rack over a baking sheet. Or you can use a roasting pan! Place the pork on the rack. Roast the pork for 30 minute in the oven and then reduce the temperature to 375 degrees. Continue to roast the pork for 1 hour and 30 minutes or until the meat is tender.
Transfer to a cutting board and cover the pork with foil and allow it to rest for 20 minutes. Carve the pork and serve!
Cuban Mojo Pork That's Marinated To Perfection & Full Of Flavor
An easy marinated Cuban Mojo Pork tenderloin recipe that can be grilled or baked!
Ingredients
- 4 LBS pork tenderloin
- 3/4 C Olive Oil
- 1 TBSP Orange Zest
- 3/4 C Pulp-free Orange Juice
- 1/2 C Fresh squeezed Lime Juice
- 1 C Cilantro, chopped
- 1/4 C chopped mint leaves
- 3 TBSP minced garlic cloves
- 2 tsp dried oregano
- 2 tsp ground cumin
- 1/4 tsp kosher salt
- 1/4 tsp ground black pepper
Instructions
- Using a large bowl, combine all ingredients and mix until combined.
- Place the pork loin into a deep dish.

If you prefer to grill it, remove after marinating and place on a medium-hot grill. Grill until the inside temperature is 145 degrees farenheight.
