My Husband loves these cookies with a big glass of milk, but I love them with my cup of coffee! It’s not overkill for me and they’re delicious at breakfast time. They might be dessert, but the coffee flavor makes them a nice quick grab on the way out of the door in the morning.

To be honest – my kids are not fans of these cookies. Kids and coffee just don’t mix. They don’t have the maturity to enjoy the rich coffee flavor, but that’s OK by me! More for myself to enjoy.

After the cookies have cooled, place any leftovers in an air-tight container. Store them for 3-4 days to enjoy. You don’t need to refrigerate anything.

What Type Of Coffee Does This Cookie Recipe Use?

You’ll quickly dissolve instant coffee granules. Instant coffee is commonly used in baking and adds an intense flavor. You can get more flavor, with less liquid, by using instant. Any brand will work. However, if you’re a coffee snob, you might want to be more selective about your brand choice. You CAN taste the coffee (very clearly) and you’ll be able to the taste the brand you picked. Flavored instant coffee would work too.

Yes! You can freeze the batter and thaw before baking (up to three months in the freezer) OR you can freeze the cookies after they’ve been baked. I like to freeze them after baking. Let them thaw to room temperature before enjoying again.

  • All-Purpose Flour

Preheat the oven to 400º. In a bowl, combine sugar and oil. Dissolve your instant coffee in the water and add to the sugar mixture. Mix well. Add eggs, one at a time, beating well after each addition.

Combine flour, baking powder and salt in a small bowl. Gradually add it to the coffee sugar mixture.

Roll into 3/4-inch balls, then roll in a small bowl of additional sugar. Place 2-inches apart on a baking sheet with silicone baking mat (or parchment paper). Flatten with a fork. Bake for 8-10 minutes or until edges are crisp. Remove and cool on a wire rack.
