How To Make FRIED EGGPLANT Over The Stove

Slice the eggplant evenly, using a knife or mandolin. 

Prepare three dishes with beaten egg, flour and breadcrumbs.

Dip a slice into the flour, then coat with egg.

Lastly, dip the eggplant in breadcrumbs to coat it.

Heat the oil, on medium-high heat and cook eggplant for 2-3 minutes on each side, until golden brown.

Serve with marina or buttermilk ranch for dipping!
